I don't post recipes often, but occasionally, I come upon something so simple that is just incredible that I have to share.
Tonight's dinner was one of those times.
So, here you go. (Note the cooking time. You want to make this overnight or on a cold day you get to spend at home.)
4 pounds of bone-in chicken (I used legs and thighs)
1 bottle of your family's taste in barbecue sauce (I used about a cup of Head Country)
Some Nature's seasoning or salt and pepper or whatever you season things with at your house
That's it.
Put the chicken in a 9x13 pan. Season it. Cover it with foil. Put it in the oven at 225 degrees for 6-8 HOURS (or until it's done - use your meat thermometer).
Then,
Take it out. Pour the broth off into a container and stick it in the freezer (but don't forget it exists). Remove the skins from the chicken. Pour some BBQ sauce over it (I used about a cup I think). Stick it back in the oven for 30 minutes. Cook some veggies. Make a side dish or slice some bread or don't. And eat. and eat. and eat.
UncaBilly and Stasha - you know that chicken that he makes that involves parboiling and grilling and fourteen other steps - well, this was a pretty close copy - and it required very little effort. All fourteen steps in his recipe do improve things a bit - but this was good and since it doesn't require grilling, it can be made in the snowy mountains. Go get some chicken and Head Country.
